In a fast-paced world, slowing down and connecting to something as important as your food can make a real difference. That’s something Julian Katz and Emily Pennington, the owners of Stasis Preserves, know all too well. To the husband and wife team, that link between people and their food is a top priority. “To be able to tell that story and connect people with how their food is grown is really important to us,” says Emily. “I really liked the idea of connecting with how we used to live,” adds Julian. “If you wanted strawberries in the winter, you had to preserve them,” he said of the products that started their whole venture.
This very idea even informs the business’ name. “My thinking was, we make all these delicious preserves, so we buy all this fruit in season and we hold it in stasis,” said Julian. “We’re holding it in time until you open the jar.”
